Recipe: Thirst-Quenching Cucumber Water

The number-one benefit of drinking cucumber water is that it tastes great, which in turn increases the amount of water you drink.

Cucumber water also provides an excellent alternative to soft drinks and sugary fruit juices, and is packed with the essential vitamins and minerals you need, such as C, A, B6 and K. Cucumbers also contain a bunch of electrolytes, including potassium, calcium, magnesium, phosphorus and sodium, which are especially important to replenish if you’re sweating a lot from heat or exercise.

Ingredients

  • ½ cucumber
  • ½ lemon, thinly sliced
  • ½ lime, thinly sliced
  • 2 sprigs mint
  • ice
  • 2 litres water

Recipe

  • Thinly slice the cucumber, either lengthwise or across.
  • Place cucumbers, lemon and lime slices, and mint in a 2-litre glass container.
  • Add a few cups of ice, and top with water.
  • Refrigerate for at least 1 hour before serving.
  • You can continue to top with water as you consume it.
  • Your cucumber water will last for 2 days in the fridge.

Be sure to visit our Aquaponics Farm District on Saturdays to purchase some organic cucumbers to make this refreshing summer drink.
